Pierre Hermé's Matcha Ispahan: Sold Out in 24 Hours — Is It Worth the Hype?

The legendary Paris pâtissier pairs Iranian roses, raspberry, and Nishio ceremonial matcha in a creation that defies every expectation.

🍫

Pierre Hermé's Ispahan — rose, raspberry, lychee — is one of the most imitated desserts of the past three decades. The announcement of a matcha variation was either a stroke of genius or a risk that could undermine a masterpiece. Having secured one before the first batch sold out, the answer is the former.

The Creation

The tart uses Nishio ceremonial grade as its base layer — a matcha ganache that sets firm but yields cleanly to the fork, with a bitterness calibrated specifically to balance Hermé's signature rose cream.

"Matcha and rose share a floral bitterness that most people don't notice until you put them together. Then it's obvious."

Verdict

Ispahan Thé is not a novelty. It is a genuine extension of one of France's most considered flavour vocabularies. The next batch is due July 14th at the rue Bonaparte maison only. Set an alarm.
